Jack’s Yuck Food List

There’s just so many things Jack doesn’t like eating. He calls himself low-maintenance, I call that fussy-pampy mommy’s boyemoticon. And he tends to get upset if I don’t remember what he doesn’t like eating and proceed SERVING them. So, yeah, low maintenance. Of course.

Here’s my list of Jack’s (growing) Yuck Food, you know, just to remind myself.

1.Tomatoes (!) - He hates it with a vengeance! What a pity, cos he’s missing out on Italian food!
2.Baked Beans - Possibly because it comes in tomatoe base.
3.Mushrooms - Especially chinese mushrooms
4.Spaghetti - Yes, because of the tomatoes again. I doubt he’s tried the cream based ones, cos I don’t like ‘em. Hehe.
5.(Slightly) burnt rice - You know, those brownish parts when you don’t use a non-stick rice cooker to cook.
6.Plain water
7.Fast foods - McD’s, KFC’s, A&W’s, pizza, anything fast-food. Actually, he does eat them, he’d sacrifice his "normal" dinner for my sake just cos I’m craving them. But he won’t feel as if he’s eaten.
8.Pork - He used to eat, and then he changed his mind about eating them. So he’d be upset if I offer it to him.

Peanut Butter Soup

Looks easy enough to prepare, maybe I’ll try making it during the weekends and if it turns out well, will keep this in mind for future parties.

 

Ingredients

2 tablespoons olive oil
3 or 4 medium to large sweet potatoes/yams peeled and cut into 1 inch cubes
2 large chopped onions
2 crushed garlic cloves
1 tablespoon ground cumin
8 cups chicken stock
1 1/4 cups peanut butter
1 tablespoon chili sauce (optional)
1/4 cup dry roasted peanuts
1/4 cup chopped cilantro or chives

Cooking:
1. Heat oil and saute onions
2. Add cumin and garlic and stir-fry 30 seconds over medium heat
3. Add chopped sweet potatoes, cover and cook for 10 minutes over low heat, stir to prevent sticking
4. Add Chicken stock, bring to boil and simmer for 10 minutes
5. Add peanut butter and chili sauce, stir
6. Simmer uncovered for half an hour, stir occasionally
7. Puree with a hand held blender or regular blender
8. Add peanuts, cilantro or chives and serve hot
